Sharing a great summer recipe today that can be easily adapted. If you prefer, it can be made in a pre-baked tart shell or you can substitute 300g raspberries or plums for the apricots. Enjoy!
Sharing some absolutely delicious Portuguese custard tarts that I baked over the weekend. Homemade puff pastry is filled with a lemon and cinnamon flavoured custard, pressed into specially shaped tins, and baked in a hot oven.
This is one of my favourite easy summer desserts and you really don’t even need a formal recipe to make it! A galette is a free-form tart so they are easy to make and look impressive and you can use whatever fruit is in season.
A bit of French baking today as I develop some new Autumn classes. This Strawberry Paris Brest is made with choux pastry, filled with strawberry mousseline, jam, fresh strawberries, and topped with a dusting of icing sugar. Yum!
Occasionally I come across a recipe and think, “I’m making this NOW!” This was one of those recipes! It is from the incredibly gifted cook and baker, Diana Henry and was featured in The Sunday Telegraph.
Some days it is just too hot to put the oven on. This is the perfect dessert for hot days plus it can all be made ahead, ready for sharing!
I came across this in a stack of old recipes I had clipped out of BBC Food Magazine at least 20 years ago. Credit goes to Orlando Murrin who was the editor at the time. It’s an absolute gem and perfect for summer baking. Enjoy!
