Summer Fruit Platter with Berry Coulis

AND RICOTTA CREAM

Some days it is just too hot to put the oven on. This is the perfect dessert for hot days plus it can all be made ahead, ready for sharing!

Berry Coulis ?

Blend equal amounts of of raspberries and strawberries together in a blender or food processor, add icing sugar and a squeeze of lemon to taste. Serve with fresh summer fruit.

Ricotta Cream ?

Whisk 175g ricotta, 75g double cream, 40g icing sugar, and 25ml dark rum with electric mixer or hand whisk until smooth. Serve with summer fruit and coulis.
**adjust icing sugar and rum to taste (or leave out the rum and add 1 teaspoon vanilla bean paste and a squeeze of lemon instead)
