Friends from the US, Canada, and France descended on the Cotswolds this week to enjoy a day of tradition British baking (and a week of hiking!). Along with catching up on everyone’s news in the kitchen, the big hits were light mini Victoria sponge cakes filled with homemade raspberry jam and Cotswold Banbury cakes.
Other treats to keep everyone going on the trail included walnut espresso squares, mini Bakewell tarts, Yorkshire Fat Rascals, and madeleines. We also made three types of brioche for breakfasts.
