Sharing a great recipe for FUNFETTI COOKIES, perfect for baking with kids (or anytime baking for anyone)!


190g flour, I used half strong white bread flour and half plain
10g cornflour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon salt
115g unsalted butter, softened
150g caster sugar
1 large egg
1 teaspoon vanilla extract


Whisk the flour, cornflour, salt, and bicarbonate of soda together and set aside. Cream the butter and sugar together until light and fluffy, add the egg and vanilla and mix well until combined. Add the dry ingredients to the butter mixture and stir just until the flour is incorporated. Add the sprinkles (as many or few as you like) and lightly mix in. Roll the dough into balls (I weighed mine into 35g balls) and roll in additional sprinkles.

Chill the balls for a minimum of 30 minutes (and up to two days) before baking. When you’re ready to bake, preheat the oven to 170 degrees fan/180C. Place the balls on baking trays lined with nonstick baking paper, leaving room for the cookies to spread when baking.

Bake for approximately 11 minutes, the edges should be set but the centre still needs to be slightly soft when they come out of the oven. Cool completely before storing in an airtight container.
