BUTTER PUDDING

Leftover hot cross buns? Here is an easy and a delicious recipe to use up any extras. If you need a good recipe to make them from scratch, head over to previous ‘news’ to find one.

Boozy Bun and Butter Pudding

Ingredients

8 leftover hot cross buns
Softened butter for spreading
Seville orange marmalade
3 Tablespoons orange liqueur
300 ml double cream
600 ml milk
4 eggs, beaten
100g caster sugar
1 1/2 teaspoon vanilla bean paste
1/2 teaspoon ground mixed spice

Recipe:

Preheat oven to 150 degrees fan/170 C. Cut the buns in half, spread with butter and marmalade, sandwich back together, and place in a large baking dish. Sprinkle the orange liqueur over the buns. Bring the milk and cream to just under boiling point in a large saucepan (watch carefully as it easily boils over!), meanwhile beat the eggs, sugar, vanilla bean paste, and ground mixed spice together in a large bowl. Pour the warmed milk over the egg mixture and beat until combined. Pour the milk and egg mixture over the buns and allow to stand for a minimum of 15 minutes before baking. Bake for approximately 50 minutes until the custard has set. Dust with icing sugar before serving if desired. Refrigerate any leftovers.
