Special Sunday Treat

OVERNIGHT WAFFLES

Welcome to part 2 of my Spring series of short baking video’s. Today I’m making Special Sunday Treat – Overnight Waffles.

It’s hard to beat a delicious hot waffle for a special breakfast treat and making them is quicker than you think. This easy recipe can be made the night before and refrigerated, allowing you some time for a lie-in too!

 

 

Ingredients:

170g warm milk
42g melted unsalted butter
1 Tablespoon maple syrup
Pinch of salt
1/2 teaspoon vanilla extract
1 large egg (60g)
120g plain flour (or a mix of plain and strong white bread flour)
3/4 teaspoon easy-blend fast acting yeast

Combine all ingredients in a large bowl and mix well, leaving room for the yeast to expand the batter. Cover and set aside to rest at room temperature for an hour. You can cook the waffles straightaway on a preheated waffle iron (timing varies greatly, start with about 3 minutes) until golden brown, or for a more yeasty flavour, refrigerate the batter overnight and stir the batter again before cooking. Serve hot with your favourite topping! This makes about 4 small waffles, recipe can be scaled up.
